Haven't done a whole pig since before I got married
We did it a couple ways - Hawaiian style by wrapping in banana leaves with wet burlap and burying the pig in sand on the beach
The other way was in a pit we build in the back of a friends Mom's house with cinder blocks - Mexican style

As a kid in Cuba, the end of summer feast was burying a huge pig, marinated in mojo, in the sand. It was wrapped in banana leaves. I can still remember the taste...

Awesome looking feast. My brother in law does the pit with cinder blocks and huge grate. Whole pigs are the best.
