My mouth is watering at the description!!  I practice CPR with freshwater fish but all these ravings about NSH meat is giving me second thought.  I may have to go down river and try to catch me one of these elusive critters.  Is there some safety guideline about consuming fish from the Potomac?

There are mercury limitations that are established for striped bass and largemouth bass, but as Curly said, none that I am aware of for NSH.

Considering they're fairly high up on the fish food chain as the other two types of bass, I would think they accumulate the same level of toxins in their flesh.

I wouldn't say they are high up on the food chain at all, size doesn't always mean high up, just look at the whale shark...
Snakeheads mostly eat small minnows like mummichogs and young bluegills, so I dont believe their toxin levels are as high as a bass

I ate my portion of Curly's NSH and it was as good as advertised. I grilled it.

The thinner parts of the fillet were incredible. The thicker parts were good but a little tougher. Not as delicate as halibut but almost as good.

Next time, I will saute in EVOO and sprinkle it with lime.....I prefer that over grilled fish anyway!

After watching the Discovery Channel tonight, the NSH is the "weak cousin" of the Giant Snakehead which is best caught with a spear gun.  Apparently, there a lot of Giant Snakeheads in the canals of FLA.
